We have it posted as being "used" but it's actually NEVER been used, merely stored for well over 40 years and to say it's in excellent condition is an understatement. It's got some very minor discoloration from warehousing and scuffing from where I knocked more discoloration off,, but otherwise its mirror-finished carbon steel blade is like new, It's a SUPER-FINE piece, as handy and useful at work as it is beautiful to behold or admire with a wickedly sharp blade that sings like a bell when you thump it with a finger, sounding the perfection of its temper.

Not all great blades ring, depending on how their handle is affixed, but those that do aren't faking it! This beautifully constructed carbon steel Oriental cleaver was made by one of the USA's finest cutlers, Dexter-Russell of Southbridge, Massachusetts, and is a wonderful piece of professional-grade cutlery that will enhance any kitchen it graces. I don't know why but these knives are seriously undervalued in the market, but they deliver world-class performance like few others, including some we sell for double its price. Useful for everything from fine mincing, dicing and chopping to tough boning, separating and butchering, the blade is large and sturdy without ever being clunky or clumsy. It will make quick work of herbs, onions, garlic, whatever--and strikes the perfect balance between heft and maneuverability.

It's also a very beautiful piece. The solid walnut handle is bolstered in brass, as warm to the touch as it is easy on the eye. If you've never used a carbon steel knife before, you're in for a treat.

Experienced chefs know that only a true carbon steel blade can consistently attain the razor-sharp edge that makes cooking a true pleasure you must wipe the knife after every use to avoid stains and rusting, but will be richly rewarded with superior performance! This knife is perfectly balanced and will make you wonder why you suffered for all these years without one. It's a piece that will last a useful lifetime if properly maintained. Despite its GIANT size, measuring 14" long with 9.25" x 4.75 blade, it weighs in at a modest 14.5 ounces. A GREAT find by any measure and an instant heirloom for user and collector alike in even the most discriminating home. A WORD ABOUT MAINTENANCE: Never use a dishwasher. Wash the knife by hand and wipe clean immediately thereafter. Wipe the knife clean when using it on wet or acidic foods. It WILL rust if not maintained properly.

I apply a very thin coat of non-toxic mineral oil to blade and wooden handles periodically, to seal them from ambient moisture in the atmosphere (olive or corn oil will suffice).
